Executive Chef of l’Atelier de Joel Robuchon à Paris Saint Germain and London, Axel Manes is amongst the youngest chefs to be distinguished by the Michelin Guide.

Born in Belgium, he grew up close to his uncle who owned the brasserie where he discovered the restaurant business. From the age of thirteen he began to show his passion for the work behind the industry with which he’d fallen in love.

Determined and driven to shape himself after the best, Axel Manes made his first appearance in Comme chez Soi, Brussels; a restaurant which held three Michelin Stars at the time. Following this he took off on a gastronomic tour of France, improving and perfecting his knowledge.

Under Nicolas Le Bec, Axel Manes had years of constant hard work without relent, but those years were the key to his success. From then on every move he made was precise, his orders were given with passion, creativity and determination. At only twenty years old, Manes had worked to perfect his skills, all the while bearing huge responsibilities for his age. At la Cour des Loges, then at the restaurant of Nicolas Le Bec, where he became Executive Chef and was awarded two Michelin Stars. After three years long, tireless, Gastronomic marathon, le Bec spoke with Joel Robuchon to recommend Manes for the position of second of the kitchen.

Joel Robuchon and Axel Manes have been working together since 2005, since then he has been trusted to direct l’Atelier de Joel Robuchon Saint Germain. The award winning collaboration has resulted in Axel Manes realising an exceptional menu, in a relaxed atmosphere, that has made Saint Germain, synonymous with excellence, and a stop on every gastronomic map.
